Mission and Programs

Mission

For teenagers who are at risk of leaving high school without job or college prospects, C-CAP offers direction, a real set of skills, and the potential for a fulfilling career in a growing industry. C-CAP works with public schools across the nation to prepare at-risk students for college and career opportunities in the restaurant and hospitality industry.

Programs

C-CAP serves 10,000 students nationwide every year in 7 locations by upgrading the vocational culinary programs in over 200 public high schools through teacher training and donations of supplies and equipment. In addition, C-CAP empowers students go on to college-level study and secure full-time employment in the field through annual cooking competitions for scholarships, career and college counseling, job training, and internship and job opportunities.

Careers through Culinary Arts Program (C-CAP) promotes and provides foodservice career opportunities for disadvantaged youth through culinary arts education and employment.

Accomplishments for Fiscal Year Ending June 30, 2007

  1. In spring 2007, C-CAP awarded 259 scholarships valued at a record-breaking $3.6 million to public high school seniors enabling them to continue their culinary training at the college level.
  2. C-CAP continued work on its entry-level skills certification program, C-CAP APPROVED, to develop an even stronger link between public high schools and the culinary industry. C-CAP APPROVED gives students a way to provide a prospective employer with a quantifiable profile of their skills, which is an important new tool in their search for employment.
  3. Enrichment programs continued to provide meaningful skills and personalized, real-life advice. Enrichment programs included After-School programs, Job Readiness and teacher training.

Objectives for Fiscal Year Beginning July 1, 2007

  1. Continue providing scholarships, job training and placement, college advising, teacher training and all of C-CAP's services for students.

Chief Executive Profile

Chef, author and educator Richard Grausman began his career in the culinary arts in 1967 when he enrolled at Le Cordon Bleu in Paris. Upon graduating he spent the next 15 years as the school's representative, teaching in major cities across the United States. In 1988 he wrote his first book, At Home with the French Classics, and in 1990 founded Careers through Culinary Arts Program. Richard Grausman has been named Humanitarian of the Year by the James Beard Foundation, Bon Appetit, and the International Association of Culinary Professionals. In 1997, he received the President's Service Award, the highest recognition given by The White House for volunteer service.
